14 Jun Banana and Blueberry Chia Loaf
I stumbled upon this recipe on Facebook (see original recipe here). I adapted a few things to come up with this gluten free, dairy free and refined sugar free loaf!
2 cups of Almond meal
1 teaspoon of baking soda
1 tablespoon Chia seeds
1 tablespoon Flaxmeal
1 teaspoon vanilla essence
1 teaspoon of ground cinnamon
1/4 cup of rice malt syrup
1-2 ripened bananas mashed
1 cup of frozen blueberries
Combine all ingredients and pour into a loaf tin that has been well greased and lined.
Bake at 160 degree C oven for 30-45mins or until slightly golden and firm to touch.
Store in the fridge due to all the egg.
